The Elio Grasso estate, located in the municipality of Monforte d'Alba, boasts 42 hectares of land, 24 of which are forests and meadows surrounding the 18 hectares of vineyards, within the World Heritage Site. Production notes
The vinification of Gavarini Chiniera® Barolo DOCG involves alcoholic fermentation in temperature-controlled stainless steel vats, with daily pumping over. After malolactic fermentation, the wine is aged in 25-hectoliter Slavonian oak barrels. Bottling generally takes place in August. Gavarini Chiniera® Barolo DOCG then rests for 8 to 10 months in the cellar before being released.
Tasting notes
Garnet color. Open nose with aromas of elderberry, blackberry, and a hint of licorice. On the palate, we find black fruits, smoky flavors, and flint. The finish is delicate, mineral, and sensual. Pairs well with red meats and truffles.
