The vines are located in the Pic Saint-Loup AOC terroir. On stony soils with Quaternary limestone scree (Jurassic limestone, harder and older). This produces fine and elegant wines, rich in the characteristics of this unique terroir.
Mechanical harvest, at night. Cold skin maceration followed by pressing. Native yeasts. Selection of free-run juices. Traditional vinification in stainless steel vats at a controlled temperature of around 16°C.
A brilliant color with light raspberry highlights. A nose with notes of dried rose petals, fresh hazelnuts, and a hint of mint, which then evolves into notes of aromatic herbs, thyme, and pink peppercorns. An enveloping, full-bodied, and rich palate. Pairs well with salads, tapas, and fish.
Quite sweet – I wonder what the residual sugar is on this? Or it could just be very, very fruit forward. Strawberry jelly, raspberry lolly, and an underlying herby note that reminds me of the fresh nettle tea we're drinking every morning at the moment. Pleasant. Serve well-chilled.
