About this winery
A 23-hectare family estate located 17 km from Cahors on the Causse Calcaire, Combel-la-Serre came into being under the impetus of Jean-Pierre ILBERT, who decided to leave the cooperative winery in 1998 to become independent. His son, Julien, returned to the estate in 2003 and now works with his wife Sophie. Little by little, the couple breathed new life into the estate: conversion to Organic Farming (via Ecocert), a return to seasonal manual work and reflection on the different terroirs, always...

Production notes
This wine is a UFO! When we found ourselves with a leftover rosé – the amazing antidote to the heat of the Causse – and a leftover wine from our three single-vineyard wines – Au Cerisier, Les Peyres Levades, and Le Lac aux Cochons – all stored together in a wine rack, we tasted it one lunchtime and thought it was quite nice and interesting enough to bottle. This resulted in "L'éléphant presque rose" (The Almost Pink Elephant), an accidental cuvée released in February 2021, with the fresh nose of rosé but with the structure and blended intensity of our three single-vineyard wines on the palate.

A crisp and delicious fruit where the acidity provides that refreshing touch so welcome this summer. A real winner for this perfect aperitif with friends, for convivial moments and sharing. No fuss, just pure pleasure! Pairs well with charcuterie, fish, tapas, or on its own.
