About this winery
A 23-hectare family estate located 17 km from Cahors on the Causse Calcaire, Combel-la-Serre came into being under the impetus of Jean-Pierre ILBERT, who decided to leave the cooperative winery in 1998 to become independent. His son, Julien, returned to the estate in 2003 and now works with his wife Sophie. Little by little, the couple breathed new life into the estate: conversion to Organic Farming (via Ecocert), a return to seasonal manual work and reflection on the different terroirs, always...

Product notes
An example of the winemakers' creativity. This lively nectar is made from several grape varieties that don't have much of a place in Cahors, but which Julien and Sophie cultivate with passion. Terroir: a unique plot of clay-limestone located on the Causse (320 m above sea level).
Production notes
Vinification: Direct pressing of whole bunches. The grape varieties were vinified separately and then blended in a cement vat for aging
Tasting notes
The nose reveals citrus, white-fleshed fruits (pear), some floral notes, and a hint of herbaceousness. An easy-drinking wine with a generous length that gives it a delicious character. A charming and uncomplicated wine. Pair with salmon and cheese.
