About this winery

A 23-hectare family estate located 17 km from Cahors on the Causse Calcaire, Combel-la-Serre came into being under the impetus of Jean-Pierre ILBERT, who decided to leave the cooperative winery in 1998 to become independent. His son, Julien, returned to the estate in 2003 and now works with his wife Sophie. Little by little, the couple breathed new life into the estate: conversion to Organic Farming (via Ecocert), a return to seasonal manual work and reflection on the different terroirs, always...

Product notes

A family estate situated on a limestone plateau at an altitude of 300 meters, the 26 hectares that make up the estate have been converted to organic farming since the 2013 vintage.

Production notes

Vinification begins with a short maceration period (a fortnight) in a stainless steel vat at low temperature (18° C) to extract the maximum amount of fruit. This is followed by alcoholic fermentation and ageing on fine lees, also in stainless steel and cement vats.

Tasting notes

With a deep purplish color that stains the sides of the glass, it offers an expressive, dark and intriguing nose, where black fruit aromas mingle with mineral and floral notes: blackberries, brambles, black earth, iron and violets. Archisec, the wine unfolds on the palate with fullness and firmness, while remaining very drinkable.
