About this winery
A 23-hectare family estate located 17 km from Cahors on the Causse Calcaire, Combel-la-Serre came into being under the impetus of Jean-Pierre ILBERT, who decided to leave the cooperative winery in 1998 to become independent. His son, Julien, returned to the estate in 2003 and now works with his wife Sophie. Little by little, the couple breathed new life into the estate: conversion to Organic Farming (via Ecocert), a return to seasonal manual work and reflection on the different terroirs, always...

Product notes
A single plot of land, 1 hectare, located at an altitude of 350 m on the Causse, in the place called Rassiels. On this plot is a beautiful pocket of ferruginous red clay on a limestone base. Our friends the wild boars love this plot, isolated from houses and the road, and enjoy a "mini-lake" (in short, a clay hole filled with rainwater) located right next to it. 4,500 bottles produced.
Production notes
Vinification in conical trunks with punching down and pumping over, maceration for around thirty days. Aged 18 months in conical trunks.
Tasting notes
Round, powerful, and indulgent. Characterized by black fruits like wild blackberry, and aromas of cocoa and tobacco without overtones. The palate is balanced between finesse, power, roundness, and indulgence. Pairs well with meat in sauce, game, and grilled vegetables.
