About this winery

14th and 15th generation of the Cavalier family, our ancestors settled in the 16th century in Vacquières, in the heart of the Pic Saint-Loup. We are continuing a story steeped in the agricultural and viticultural evolution of Languedoc, where each generation has left its mark

Product notes

The vines from which this wine is made are planted on soil made up of limestone shards resulting from the fragmentation of limestone by water freezing in their fractures ("gelifraction"), then spread into vast alluvial fans by torrents, during one of the last cold periods of the Quaternary era.

Production notes

Traditional vinification, with a 3 to 4-day maceration followed by alcoholic fermentation lasting 15 to 20 days in a truncated cone-shaped vat. Aged in large oak casks for 12 to 14 months, then matured in tank for 3 months before bottling. Bottle aging lasts at least 1 year before release. The vines used to produce this wine are planted on soil composed of limestone fragments, resulting from the fracturing of limestone by water freezing in its cracks ('frost shattering'), then spread into large alluvial cones by torrents during one of the last cold periods of the Quaternary era

Tasting notes

Very bright purple color. A nose that's both deep and intense, and delicious. Notes of ripe fruit, spices (cinnamon), and licorice. On the palate, it offers lovely freshness, fine tannins, hints of thyme, and a beautiful tension. A finish with notes of wild blackberry and beautiful complexity. Pairs well with red meats, duck, and grilled meats.

James Suckling, August 2023 (Vintage 2019)

A juicy but well-structured red with wild berries, dark plums and grilled herbs on the nose. Medium body with fine, firm tannins. Dense and fruity with a vivid finish and excellent length. From biodynamically grown grapes with Demeter certification

17 / 20 Points

Tamlyn Currin, July 2023 (Vintage 2019)

The dominant lead of Syrah combined with the oak-ageing accentuates farmyard and old, well-worked-leather tones, taking the wine down a much more savoury track than the Carra 2021. Dried fruit. The tannins are more powerful, more astringent and the wine feels as if there is a bit more alcoholic heat. Powerful and impressive, but give me the purity of Carra any day.
