This special cuvée was developed in collaboration with chef Charles-Antoine Crète of the Montréal Plaza.

Production notes

Vinified in stainless steel vats. Aged for 48 months.

Tasting notes

The dominant Chardonnay gives it a delicate, subtle, and very elegant nose, revealing aromas of white flowers and charming fruity notes carried by the Pinot Noir grape variety. The minerality asserts itself, giving it distinction and nobility. The palate is beautifully rounded, and a hint of freshness invigorates the palate, highlighting a lovely structure supported by admirable length. Pairs well as an aperitif, fish tartare, and seafood.

Lots of sliced-lime and mineral aromas follow through to a medium body with a salty and chalky undertone to the citrusy fruit. It’s fresh, crisp and very clean. Touch of butter cookies at the end. Almost crunchy in character. Drink now.

Lovely aroma of lemon cheesecake. Ripe lemon on the palate, complemented by a lime-zested creaminess (not too creamy), a touch of cold wet steel and a light hint of toasted hazelnut. The acidity runs purposeful linearity through the wine, start to finish, but there are little side steps of pithy bitterness, of orange pips, of peach kernel. A sense of satisfying completeness.
