About this winery

The Borie de Maurel estate is located in the heart of the Livinière terroir (Félines-Minervois), the first Villages appellation of Minervois and Languedoc. Since the late 1980s, Michel Escande has established himself as one of the best winemakers in Minervois, thanks in particular to the admirably mellow and silky tannins of his reds. Product notes

The Story of the Cuvée: Let your eyes be drawn into this deep purple robe, intoxicated by its violet reflections. Dare to admire its legs. La Féline is like that: a seductress. Its fragrances and aromas unfold like caresses. Like Sylla (another cuvée from the Domaine), La Féline embodies the style of Michel Escande's wines (the winemaker): voluptuous, heady without being overpowering, where each sip begs for the next.

Production notes

This "gallant wine for fine dinners" is the result of a blend of two-thirds Syrah and one-quarter Grenache, enhanced with a touch of Carignan. All these grapes, hand-harvested on the clay-limestone terroir of the Petit Causse, are destemmed before undergoing a long maceration. Aging, which lasts at least 16 months, takes place in tanks. Filtration is very light.

Tasting notes

Its initial aroma, redolent of black pepper, cumin, and tapenade, is intense. This is followed by delicate notes of thyme, garrigue, and very ripe, almost fig-like red fruits. The palate, all lace and finesse, also plays on this register of refinement and elegance, with a rustling of sweet spices and Morello cherry. However, beware! Behind this apparent simplicity lies a surprising complexity that the years, like those of a beautiful woman, will only enhance and amplify… Pairing with leg of lamb with olives
