The Borie de Maurel estate is located in the heart of the Livinière terroir (Félines-Minervois), the first Villages appellation of Minervois and Languedoc. Since the late 1980s, Michel Escande has established himself as one of the best winemakers in Minervois, thanks in particular to the admirably mellow and silky tannins of his reds. History of the Cuvée: An ode to the Aude department.
Production notes
The grapes, just shy of overripeness, are harvested in the cool of the morning and immediately pressed. The must is cold-settled and vinified with temperature-controlled fermentation. Aging continues naturally on fine lees in tanks for three months before bottling.
Tasting notes
A delightful white wine, full-bodied yet balanced, the kind you open just as easily for an aperitif with friends as for a more elegant dinner. Its golden hue releases aromas of toast, blond tobacco, pineapple, and white peach. The palate, rich and full-bodied with just the right amount of acidity, concentrates the aromas already perceived on the nose, enhanced by hints of gingerbread. Pairs well with scallops and cheeses.
