Product notes

Clos du Papillon is a flow (a small valley) which descends towards the Loire, very well exposed and perfectly drained. The soil there is made up of schist which abounds in this region, but also of quartz and rhyolite. The 50-year-old vine must take deep roots to draw its nutrients.

Production notes

Manual harvest with selection of bunches on the stump. Three passages: 3 stages of maturity. Gentle and slow pressing, native yeasts. Settling for 12 hours. Fermentation for 2 months then aging for 12 months on fine lees in Allier oak barrels.

Tasting notes

Aromas of cooked fruit, citrus, apple, followed by pineapple and toasted almond. Very mineral. Very long in the mouth. Pairings with scallops and lobster

July 2023 (Vintage 2020)

The 2020 Clos du Papillon is shy aromatically, offering up restrained characters of white stone fruit, almond meal and an intriguing whiff of smokiness. It is a textured Savennières, initially caressing the mouth with its silken texture before showing its true colors: this is a powerful style with drive. Its tension, austere acidity and phenolic grain reflect its poor, volcanic soils.
