Product notes

It is within the Saint Nicolas de Bourgueil appellation and more precisely on gravelly hills that “Les Perruches” is located. The montils are a thick layer of clayey-siliceous gravels with iron grime in depth. This terroir is planted exclusively with Cabernet Franc, at least 25 years old.

Production notes

The harvest is manual and then the grapes are sorted grain by grain at optimal maturity. Vinification is carried out in the traditional way in wooden vats after destemming. Pigeage on the foot twice a day for around ten days. Macerations are long (around a month) and malolactic fermentation often begins under the pomace. Alcoholic fermentation begins naturally one day after vatting. The wines are then barreled into barrels. They will stay there for a year. Afterwards, they will be drawn off then put into bottles without filtration or fining.
