About this winery
A 23-hectare family estate located 17 km from Cahors on the Causse Calcaire, Combel-la-Serre came into being under the impetus of Jean-Pierre ILBERT, who decided to leave the cooperative winery in 1998 to become independent. His son, Julien, returned to the estate in 2003 and now works with his wife Sophie. Product notes
A single plot located at an altitude of 350 m on the Causse, in the place called Peyres Levades in Cournou. As its Occitan name indicates, the "Pierres Levées" directly evokes its terroir; it is also the most calcareous plot of the 0.58 hectare estate, aged 50 years. 2,000 bottles produced annually
Production notes
Vinification in conical tanks with light pumping-over, 30-day maceration and 16-month ageing in conical tanks.
Tasting notes
The nose offers deep black fruit (blackcurrant, plum, blueberry) complemented by notes of menthol, pepper, and violet. It's impossible to deny its graphite terroir with such minerality! The extraction is just right, the tannins are fine and prominent, and the finish is still a little tight but so elegant. Pair with Rib of Beef and Duck
