Product notes

40 to 60 year old vines on gabbro bedrock at a depth of 40 cm

Production notes

Gentle pressing upon receipt of the harvest using a pneumatic press. Cold static settling for 12 hours and fermentation in underground glass-lined vats. Native yeasts. Aging: 18 months on fine lees, with stirring during the first weeks of aging.

Tasting notes

Remarkable aromatic finesse, with aromas of white fruits, intense minerality, and an iodine and saline note reminiscent of its proximity to the ocean. Great aging potential. Pairs well with shellfish, scallops, and grilled fish.
